Another successful year for Bermar at The Restaurant Show 2012

Team Bermar are pleased to have enjoyed a 21st straight year at The Restaurant Show – and the event was so successful that we’ve already signed up to be there again in 2013!  

Team Bermar are pleased to have enjoyed a 21st straight year at The Restaurant Show – and the event was so successful that we’ve already signed up to be there again in 2013!  The 3-day event at Earl’s Court in London was a great opportunity for us to catch up with friends old and new, and to introduce our products to many new customers.

Our new-look stand was a real hit with show visitors, many of who stopped for a photo against the backdrop of the Illuminated Bermar Wall of Fame.  In an homage to the Hollywood Walk of Fame, our multi-coloured wall featured the names of a few of our well-known customers such as Gaucho Restaurants, The Savoy and Le Gavroche, each below one of our iconic ‘Classic Le Verre de Vin’ systems (see photo below).  


The Bermar stand caught the eye of many a passer-by, including a number of VIP guests who stopped to enjoy a glass of Champagne and canapés with us whilst browsing our product range.  Guests included celebrity chefs Nathan  Outlaw and Tom Kerridge as well as the world’s undisputed #1 Maitre d’, Silvano Giraldin of Le Gavroche, Arnaud Goubet of Le Manoir, Sat Bains, John Freeman, Laurent Richet, James Petrie of The Fat Duck, and Jack Stein (son of celebrated chef Rick Stein).  For more of the photos from the event see our Facebook page.

Professional wine preservation: The key to unlocking your pub’s potential

Maddy Bonvini-Hamel (proprietor of the award winning British Larder and avid Pod Bar fan) said in her recent article in The Morning Advertiser, “It’s hard for any passionate chef to accept they have to change” however as an operator in the dynamic on-trade industry, where consumer demands and expectations are ever-growing, adapting to changing trading conditions is a key element of the business mix in order to stay relevant.  
 
Maddy goes on to say change doesn’t necessarily mean a radical overhaul; sometimes tweaking an existing service is all that is required to add value for your customers but is quick to point out “Value … can be measured in various ways.  Value does not necessarily mean cheap”.

Sporting victory for ‘Team GB’ (well, ‘Team Bermar’)

The Olympics may be over and Murray might have registered a first in the US Open tennis, but the sporting spirit was still well and truly alive this Monday at the inaugural Gaucho Cup golfing tournament at Stoke Park Country Club in Berkshire.  

The Olympics may be over and Murray might have registered a first in the US Open tennis,  but the sporting spirit was still well and truly alive this Monday at the inaugural Gaucho Cup golfing tournament at Stoke Park Country Club in Berkshire.  The event, organised by The Gaucho Restaurant Group, saw competitors enjoy 18 holes on one of the UK’s finest golf courses followed by a world class steak and delicious red wine in the sponsor’s pop up Gaucho restaurant.  
 
Dick, Kristian, Tom (Dick’s son) and Steve Wilkins (a longstanding friend and customer) represented ‘Team Bermar’ at the event,  and claimed a ‘first ever’ golfing victory in a team event.  The icing on the proverbial cake is the fabulously generous first prize – a golfing  trip to Argentina!   Here are ‘Team Bermar’ celebrating their win (sadly not a Mo-bot or Bolt pose in sight):

Why the on-trade needs to develop ‘ladies appeal’

Research reveals women are the key decision makers when it comes to choosing where mixed sex groups eat/drink.

There’s plenty of chatter about the Grey Pound and Young People’s Venues/Sports Bars …but a recent survey into the drinking habits of pub and bar goers in the UK revealed something that’s perhaps a little surprising.  It is in fact women who are the key decision makers when it comes to deciding where mixed sex groups will eat/drink. Sowhat does this mean for you?  How can you capitalise on this trend and use it to boost your business?

The Pub Goers Survey (published in the 3rd September issue of Pub & Bar) recommended that operators develop or introduce elements to help their business become more female friendly.  They went on to suggest offering a decent range of wines and/or selling prosecco by the glass as key ways to do this.  These recommendations are supported by findings showing 24% of people cite a larger range as influencing their choice of pub or bar

Pub&Bar magazine wrote: “Consumers have become more demanding and more discerning when it comes to their pub-going habits.  With increases in standards of living and better quality homes, not to mention the advent of modern coffee shops and the growth in fast casual dining, today’s pub visitor is looking for something more than a simple watering hole.”

So how should you go about implementing female friendly initiatives such asan extended range of wines or selling ‘fizz’ by the glass as the report recommends?

Battlesteads Hotel, Pub & Restaurant in Northumberland has recently introduced a 7 course tasting menu.

The award winning Battlesteads Hotel, Pub & Restaurant in Northumberland has recently introduced a 7 course tasting menu – each of which is served with a carefully selected matching wine to enhance customers’ dining experience.

We recently visited the infamous Rivoli bar at The Ritz, London to catch up with Head Sommelier, Matteo Ramazzina.

Rex Restaurant Associates (owners of The Wolseley and The Delaunay), have recently installed a Le Verre De Vin, professional wine & Champagne preservation system in their new London restaurant, Brasserie Zédel.

Brindisa offering sherry by-the-glass

Did you know Le Verre de Vin systems can also be used for the preservation of sherry?! Spanish restaurant chain Brindisa certainly do ... 

Spanish restaurant chain Brindisa are putting their newly installed Le Verre de Vin systems to good use.  The restaurants offer a great range of sherries by the glass alongside their impressive selection of wines by the glass.  

Tapas Brindisa in London's Borough Market was declared the best tapas bar in Britain by The Independent in 2007.  The talented chef Jose Pizarro led the chain's expansion to two new sites in Soho and South Kensington in 2008.  The chef, who has appeared on the BBC’s Saturday Kitchen and UKTVFood’s Market Kitchen, has since opened his own sherry and tapas bar, Jose, on Bermondsey Street and a Pizarro, a full sized restaurant, nearby (all complete with Le Verre de Vin systems of course!)

We've had a look at their drinks menu and we must say their wine list is just as impressive as their food offerings.  Not only do they boast the unusual opportunity to sample a selection of sherries by the glass, they also offer a fantastic wine list.  Brindisa say "Our wine list brings you a changing selection of new Bodegas and established names in the world of Spanish wines.  Many are made from indigenous grape varieties or are from some of the lesser known wine-making regions."

Surely the most remarkable statistic in the report is that there are currently 5 million UK consumers who choose to drink sparkling wine of some sort at least once a week.  So it’s perhaps not surprising that operators who have invested in a Le Verre de Vin or a Pod Bar have responded by increasing the range and price points of Champagnes and sparkling wines they’re offering ‘by the flute’.

Latest trends in the ‘Fizz’ market
Now, perhaps for the first time, there’s a valid argument that there is such an animal as a ‘committed sparkling wine drinker’. Those who consume at least once a month – represent 90% of the market by volume; they are slightly more likely to be women than men, but divided fairly evenly across the generations and social spectrum (41% are from the AB socio-economic group.)
 
Wine Intelligence found that 56% of alcohol drinkers enjoy sparkling wine of some sort at least once a year – not far behind the number that drink beer
 
What’s driving ‘Fizz’ sales?
The role of Prosecco in driving sales has been widely acknowledged although consumer data shows that it’s not just Prosecco that’s been performing strongly. Champagne continues to hold its own in the restaurant trade although it’s now matched by New World sparklers.  Prosecco is close behind, with English sparkling wine perhaps a surprise contender.
 
Will the trend continue?
The great news is that apparently we can expect sparkling wine’s upward curve to continue.  Richard Halstead, COO of Wine Intelligence says growth is “a trend that is largely independent of economic conditions” and the vast majority of sparkling wine drinkers foresee no change in their drinking habits in the coming year. In 2012 it seems that the UK sparkling wine market will have much to celebrate.

October sees the long promised introduction of laws that allow the sale of wine tastes (below 75ml). Besides being a restaurant with no menu as Chef max calls the shot, it is also afterall going to be the 1st restaurant in the region to serve all the legendary 1st growths of Bordeaux by the GLASS.

 

The bottles that were opened for indulgence that evening includes aChateau Haut-Brion, Chateau Mouton Rothschild, Chateau Margaux, Chateau Lafite Rothschild, Chateau Latour and Chateau d'Yquemall of which are of the 2001 vintage. We were given an introduction by Lionel Lau, co-owner of Millesime whom has been in the wine industry for many years.

Allthe wines are from either the 2000 or the 2001 vintage, which we believe are drinking perfectly right now,” said Max Chin, chef and co-owner of Millesime. “We have a temperature controlled wine room and a Le Verre de Vin preservation system from Europe and this allows us to offer our customers this unique experience".

Developing a good core wine offering can add value to your business and boost the bottom line. And it’s not as daunting as it sounds if you follow a few simple guidelines, says Andrew Catchpole

Once you have the right wines for your establishment, at the right prices, then there is one single factor that is widely agreed can make a big difference to your list, both in terms of customer satisfaction and potential increased margin – namely serving a good selection of wines by-the-glass.
 
Operators understandably worry about wastage, especially with their premium wines and Champagnes. But it is a relatively small investment to put in place commercial wine-preservation equipment to allow them to extend their by the glass range risk free. The 69% of customers who regularly look to buy by the glass have a wider selection to choose from and will readily trade up. Similarly the extended offering will entice more customers to choose a glass of wine as their tipple of choice.
 
Maddy Russell at Bermar International, manufacturer and supplier of market leading wine preservation solutions, explains just how simple it can be to offer a good selection (including sparkling wines) by the glass and at the right temperature.
 
“Using Le Verre de Vin technology, one system will do everything, whether you are offering 10 or 300 wines & Champagnes by the glass” she says. “And with our system, operators have the freedom to present and pour the wine in front of the customer whether at the bar or at the table. Each time a wine is served the seal is broken so they can see that their wine has been kept in perfect condition, reassuring them that they are getting the same benefits as they would if receiving a glass from a newly opened bottle.”
 
At its heart, this is a simple but very effective system. Le Verre de Vin evacuates oxygen from the bottle to a critically precise level so that still wines are kept pristine, with no oxidation and for Champagnes it introduces a precise head-pressure of C02 to retain all the natural fizz. Premium wines and Champagnes can now be offered by the glass, with the quality of each and every pour guaranteed for up to 21-days.
 
Russell, who has 20 years experience in the business, highlights two more key factors to consider. A lot of outlets still don’t display their wine offering and also don’t serve wines at the right temperature, which of course differs for different styles of wine,” she continues. “A solution is to consider a temperature controlled Pod Bar preservation and display cabinet, these are modular so can be integrated and added to at any time. This means that an outlet can display up to 16 wines at the correct temperature per fridge. It makes the offering highly visual for the customer and they can increase the cabinet capacity as their wine service grows.”
 
This is all great advice and time and again a basic investment in both the wine list and the storage and serving of that wine is proven to up the appeal and subsequent customer spend. Put another way, if your list isn’t quite up to scratch, you are losing potential revenue. But this is something that is surprisingly easy to fix with just a few well-chosen wines, some basic staff
training and a fairly modest investment in this crucial side of your business.

In the wake of a varied Christmas trading period for the retail sector, the clouds of recession seem to have well and truly bypassed the London restaurant scene.  

In the wake of a varied Christmas trading period for the retail sector, the clouds of recession seem to have well and truly bypassed the London restaurant scene.

Late 2010 and early 2011 saw huge investment in the capital’s hospitality industry, not least of all the £220m refurbishment of the Savoy Hotel which re-opened it’s doors in October. With countless other high profile openings over the last few months London’s message is clear… recession or no recession, the customers are here and they’re ready and willing to spend.

Wine by the glass is higher on the ‘refit agenda’ of hotels and bars than ever before and we are delighted to report that Le Verre de Vin is the preservation system of choice for just about every high profile new opening! The ‘by the glass’ offer extends to 30 choices, 14 of which are available in three different sized carafes. Awarded J Rayner’s restaurant of the year it is set to become yet another Le Verre de Vin flagship site.
 
 
The Savoy Hotel
Le Verre de Vin was first installed at the Savoy in 2001 and, since the £220 million refurbishment, is once again the preservation system of choice in the American Bar and the chic new art deco, Beaufort Bar which boasts “one of the widest choices of Champagne by the glass”.
 
 
 
 
Cassis Bistro
A new restaurant that has been widely praised for bringing something completely new to the London restaurant scene. The operation combines the finest Provencale cuisine with a relaxed and modern setting…and of course a fantastic wine by the glass offer.
 
The Lanesborough Hotel
World renowned for first rate service and dining, the hotel was awarded the 2010 award for Best Small City Hotel in Europe. Four Seasons, Canary Wharf
Located at the heart of London’s vibrant business district, the Quadrato restaurant which has been hailed as one of Canary Wharf’s most stylish eateries, took delivery of a Le Verre de Vin late last year.
 
The Cinnamon Club, Westminster
At the heart of Westminster, The Cinnamon Club offers a truly fantastic and unique dining experience. European style meets Indian haute cuisine and the resulting dishes dishes feature on a constantly changing menu and are complemented by a beautifully sympathetic, matched wine list.
 
These operations are run by some of the British hospitality trade’s most savvy operators; they will no doubt have reviewed all the options available to them before choosing the wine preservation solution for their business …. and in EVERY case, Le Verre de Vin was their preservation system of choice!. The 2010 IWSC Awards Banquet was held on Wednesday (17th Nov) at the Guildhall, London, with the who’s who of the wine industry in attendance.

Waitrose fended off tough competition from the likes of Marks and Spencer and Sainsburys to be crowned the IWSC Wine Retailer of the Year – sponsored by Bermar (International) Ltd.

Judges for the category unanimously agreed that Waitrose performed consistantly well in each of the judging stages. Team Waitrose also retained the European Retail Wine Buyer award which they won at the 2009 IWSC awards.
