On their recent investment in Le Verre de Vin, Chris commented: “For us, preserving still wines and Champagne is extremely important because we can make our wine list more interesting by increasing the range of wines available by the glass. This allows us to offer wine pairings with dinners, wine flights across different grape varieties and it means we can have more of a ‘conversation’ about wine with our customers. The Le Verre de Vin system puts the customer in control of getting the wine they want without having to buy a whole bottle.
We’ve recently launched a new Champagne bar at the Sofitel London Heathrow and we simply would not be able to offer such a wide range of vintage and rosé Champagnes by the glass without a Le Verre de Vin system.
Payback on our investment has been rapid at approximately 6 months and, to be clear, the margin growth we’ve experienced has not come from increasing our prices, it has come from spend growth. By offering our customers a wider range of higher quality wines and Champagnes by the glass they are willingly trading up and spending more.
