Have you been out to a pub, bar or restaurant recently and noticed how many people are sitting there with a glass of fizz in their hand? There’s quite a few… well a lot in fact! In the past 12 months on-trade sales of fizz (Prosecco, Cava, Champagne, English sparkling etc.) are up by 49% with all indicators suggesting that consumption is only set to flourish in coming months and years. In pubs alone sparkling sales are up by 270% since 2011 – that’s quite a hike!
Perhaps even more significant is a recent piece of research which shows that the gap between what’s being offered by on-trade operators in terms of a wine service and range and what customers want is still too wide. 42% of on-trade operators polled felt their offer was well served and in good condition. Only 24% of their customers agreed.
Furthermore, nearly half (49%) of those operators thought they were offering a good range of fizz with different price points and varieties. Only 29% of their customers agreed.
The argument gets even stronger for team Bermar too; 88% of the on-trade believe they are serving white wine at the right temperature, but only half (51%) of customers do. With 39% complaining their white wines are served too warm (ahem Pod Bar!!)
Wine by the glass is a topic where the trade and customers still seem divided; nearly half of the on-trade (48%) think they have the numbers right on the amount of wines they offer by the glass, only 27% of their customers agreed with them.
Take a look at the figures below:
Clearly there has never been a better opportunity to monetise a broader and better range of wines and fizz by the glass and using Le Verre de Vin & Pod Bar to eliminate the twin perils of waste and serving a bad glass will allow you to drive profitability from the initiative.
So this August bank holiday, expand your list and include some Proseccos and Champagnes, expand further and offer them by the glass. Remember to keep your wines and Champagnes fresh with Le Verre de Vin though, the only product in the world that can precisely preserve both still wine and Champagne.
Happy weekend – don’t forget to send us a pic of what you’re drinking; @leverredevin on Twitter or BermarCollection on Instagram!
